8 Valentine’s Day Breakfast Recipes

Simply Delicious Banana Bread

Servings: 16

Ingredients

1 egg

1/2 cup Miracle Whip dressing

1-1/3 cups mashed fully ripe bananas (about 3)

1-1/2 cups flour

1 cup sugar

1/2 cup chopped walnuts

1 tsp. baking soda

1 tsp. salt

 

Directions

Heat oven to 350ºF.

Beat egg, dressing and bananas in large bowl with whisk until well blended. Mix remaining ingredients in separate bowl. Add to banana mixture; stir just until moistened.

Pour into greased 9×5-inch loaf pan.

Bake 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan to wire rack. Cool completely.

Cream Cheese & Cherry Pancakes

Servings: Approx. 35 pancakes

Ingredients

1 pkg. (8 oz.) cream cheese, softened

4 eggs

2/3 cup flour

1/2 tsp. salt

2 Tbsp. oil

1-3/4 cups cherry pie filling, warmed

7 tsp. cinnamon sugar

 

Directions

Beat cream cheese and eggs with electric mixture on medium speed until well blended. Add flour and salt; mix well.

Heat oil in large skillet on medium heat. Drop tablespoonfuls of the cream cheese mixture, in batches, into skillet; cook 1 minute or until bubbles form on tops, then turn over to brown other sides, adding more oil if necessary. Drain on paper towels.

Place five pancakes on each dessert plate. Top evenly with pie filling; sprinkle with cinnamon sugar.

Rise ‘n Shine Breakfast Burrito

Servings: 2

Ingredients

4 slices turkey bacon

2 flour tortillas (8 inch)

2 Tbsp. shredded cheddar cheese

2 egg whites

1 Tbsp. canned chopped green chiles

1/4 cup salsa

 

Directions

Cook bacon in small nonstick skillet on medium heat 8 to 10 minutes or until lightly browned. Place on tortillas; top with cheese.

Beat egg whites and chiles until well blended. Add to hot skillet; cook and stir 2 minutes or until set. Spoon onto tortillas.

Fold in opposite sides of each tortilla; then roll up burrito style. Top with salsa.

Fruit-Filled Pancakes

Servings: 8

Ingredients

2 Tbsp. butter or margarine

1/2 cup flour

1/4 tsp. salt

1/2 cup milk

3 eggs

4 oz. (1/2 of 8-oz. pkg.) cream cheese, softened

1/2 cup marshmallow creme

1 cup sliced strawberries

2 medium peaches, peeled, sliced

1 cup blueberries

 

Directions

Preheat oven to 450°F. Add butter to 9-inch pie plate; heat in oven until melted. Tilt pie plate to evenly coat bottom and side with butter. Beat flour, salt, milk and eggs with wire whisk until well blended; pour into pie plate. Place on lowest oven rack.

Bake 18 minutes. Reduce oven temperature to 350°F. Bake an additional 10 minutes or until golden brown. Meanwhile, beat cream cheese and marshmallow creme with electric mixer on medium speed until well blended.

Fill pancake with fruit; top with the cream cheese mixture. Serve immediately.

Ingredients

1 egg

2 slices white bread

1 Tbsp. mayonnaise

1 slice smoked ham

1 slice American cheese

 

DIrections

Heat skillet sprayed with cooking spray on medium heat. Add egg; cook 4 minutes or until white is set and yolk is cooked to desired doneness. Remove from skillet.

Spread bread slices with mayonnaise.

Place 1 bread slice, mayonnaise-side down in skillet; top with ham, egg, cheese and remaining bread slice, mayonnaise-side up. Cook 2 minutes on each side or until golden brown on both sides.

Nothing spoils breakfast in bed like a dirty kitchen afterward. Once you’re finished making the breakfast recipes, be sure to clean up the mess. Go the extra mile and run the dishwasher—your partner will love you for it!

 

 

Late Risers’ Crustless Quiche

Servings: 12

Ingredients

5 green onions, chopped, divided

1 tomato, chopped, divided

12 slices bacon

1 cup sliced fresh mushrooms

12 eggs

1/3 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

 

Directions

Heat oven to 325ºF.

Reserve 2 Tbsp. each onions and tomatoes. Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add mushrooms to reserved drippings; cook and stir 2 minutes or until tender. Remove from heat. Crumble bacon. Add to skillet with remaining onions and tomatoes; mix well.

Beat eggs and sour cream with whisk until well blended. Pour into greased 13×9-inch baking dish; top with bacon mixture and cheeses.

Bake 30 minutes or until center is set. Top with reserved onions and tomatoes. Let stand 5 minutes before cutting to serve.

Easy Eggs Benedict with Ham

Servings: 4

Ingredients

1/4 cup plain nonfat yogurt

1/4 cup mayonnaise

1 tsp. yellow mustard

2 English muffins, split, toasted

12 slices smoked ham

4 large eggs, poached

 

Directions

Cook yogurt, mayo and mustard in saucepan on low heat 5 minutes or until heated through, stirring constantly.

Top muffin halves with ham, eggs and sauce.

Who said you had to use breakfast recipes when putting together breakfast in bed? Do things a bit differently by choosing a few of your darling’s favorite foods, and then sharing a slice of cheesecake or a piece of pie. 

 

 

Velveeta Cheesy Casserole

Servings: 12

Ingredients

1 pkg. (16 oz.) breakfast pork sausage

1 onion, chopped

1 each red and green pepper, chopped

1/2 cup salsa

3/4 lb. (12 oz.) Velveeta, cut into 1/4-inch cubes, divided

1 doz. eggs

1/3 cup sour cream

 

Directions

Heat oven to 350°F.

Cook sausage, onions and peppers in large skillet on medium heat 6 to 8 minutes or until sausage is done, stirring occasionally. Drain; return to skillet. Stir in salsa and half the Velveeta; spread onto bottom of 13×9-inch baking dish sprayed with cooking spray.

Whisk eggs and sour cream until well blended; pour over sausage mixture. Top with remaining Velveeta.

Bake 40 minutes or until center is set.
